How to Use
Season ground meat for kofte, kibbeh or a meat filling, rub it on chicken or lamb before roasting, or stir a pinch into rice, lentils or a tomato stew as it cooks. Start with about half a teaspoon per pound of meat and add to taste - cinnamon and cloves come through quickly.
Because the blend has no salt in it, season with salt separately. Shake it over a dry spoon rather than straight over a steaming pot, so moisture does not get into the jar and cake the powder.
