Artichoke bottoms from Egypt, trimmed down to the cup and frozen. The pack names one ingredient - the artichoke itself - so what you are buying is the part you would otherwise spend a lemon and twenty minutes getting to.
Highlights
- 100% artichoke bottoms - the only ingredient on the pack
- No preservatives - as printed on the front of the bag
- Kosher - K mark and Badatz Beit Yosef seal on the pack, which also marks it kosher for Passover for those who eat kitniot
- 14.1 oz (400 g) - four 100 g servings by the label
- Frozen product of Egypt - bottoms, not hearts: no leaves and no choke left to deal with
How to Cook
Cook them from frozen. Simmer in salted water with a squeeze of lemon until a knife goes in without resistance, then use them as they are or fill them.
For zeytinyagli enginar, braise them from frozen in olive oil, lemon and a little water with peas, carrot and potato, let them cool in the pan and serve at room temperature with dill. Once thawed, do not put them back in the freezer.
What Is an Artichoke Bottom?
It is the fleshy base of the artichoke, the part left once every leaf and the hairy choke have been cut away. It tastes mild and slightly sweet, with the grassy edge artichokes are known for. Compared with jarred artichoke hearts, which keep some inner leaves and sit in brine, a bottom is a solid cup with no sour pickle taste. That cup shape is why it is the classic choice for stuffing - with rice, minced meat or a vegetable filling - and for the Turkish olive oil dish zeytinyagli enginar.
