Frozen okra from Egypt in the Zero grade - the smallest pods sold, the size Arabic and Turkish kitchens pick out for bamya. The pack names one ingredient, the okra itself.
Highlights
- Zero grade - the name okra is sold under in its smallest pod size
- 100% okra - the only ingredient on the pack
- No preservatives - as printed on the front of the bag
- Kosher - K-P mark printed on the pack
- 14.1 oz (400 g) - four 100 g servings by the label
How to Cook
Straight from the freezer into the pan - do not thaw it and do not rinse it. Soften onion in oil, add tomato and a squeeze of lemon, tip the okra in frozen, cover and leave it on a low heat with as little stirring as possible.
The same frozen pods go into a meat bamya stew or a zeytinyagli bamya served at room temperature. Once thawed, do not put them back in the freezer.
Why Okra Comes in Grades Like Zero
Okra is sorted by pod size, and the smaller the pod, the more tender it is and the fewer seeds it carries. Zero is the name used for the smallest size, chosen because the pods cook whole, quickly and evenly. Larger grades are cheaper and better suited to slicing into soups. If you have only bought large fresh okra, these small pods are a different experience in a stew - firmer, neater in the pot, and easy to eat in one bite.
