Gum mastic - damla sakizi - in a single 1 g sachet from Gardenia Grain D'or, made in Lebanon. Mastic is a tree resin that dries into small pale tears, and a little goes a long way: it gives Turkish and Middle Eastern puddings, ice cream and sweet breads their clean, pine-like aroma.
Highlights
- Extra grade - sold as Extra Mastic on the pack
- One 1 g sachet - about the right amount for a pot of muhallebi or a batch of sweet dough
- Made in Lebanon - as printed on the card
- Marked natural product - as printed on the pack
How to Use
Mastic is sticky when warm, so grind it first: crush the tears in a mortar with a pinch of sugar (or freeze them for a few minutes) until you have a fine powder, then stir it into the milk or dough. Use it in sakizli muhallebi, rice pudding, dondurma-style ice cream, Turkish coffee, tea and holiday breads such as paskalya coregi. Start with a few tears - too much turns bitter.
What Is Damla Sakizi?
Damla sakizi is the resin of the mastic tree, a small evergreen of the Mediterranean. It is collected as drops that harden in the air - damla means drop. It is not chewing gum, though people have chewed it for centuries; in the kitchen it is used as a spice for its aroma and for the slight stretch it gives puddings and ice cream.
