Short flat ribbons of eriste from Nuhun Ankara, made from durum wheat semolina and nothing else. The cut-noodle shape Turkish kitchens use for buttered eriste, soups and quick weeknight plates.

Highlights

  • One ingredient - durum wheat semolina, with no egg and no added salt on the ingredient list
  • Short flat ribbons - cut short, so they eat easily with a spoon or a fork
  • 10 to 12 minutes - the cooking time printed on the bag
  • 17.64 oz (500 g) - about 8 servings, as the pack states
  • Made in Turkiye - by Nuhun Ankara Makarnasi

How to Cook

Bring plenty of water to the boil - the bag suggests about 1 liter for every 100 g - and salt it lightly. Add the eriste and cook gently for 10 to 12 minutes, stirring now and then. The bag's own tip: pour in a glass of cold water as soon as it is done, then drain and serve.

Toss it with butter and crumbled white cheese, top it with fried walnuts, or drop it into a chicken or tomato soup for the last minutes of cooking. Do not overcook it in soup; it keeps softening in the hot broth after the heat is off.

What Is Eriste?

Eriste is the Turkish name for flat noodles. In villages it was traditionally rolled out by hand, cut into strips and dried for the winter, and it is still served simply - boiled and dressed with butter, cheese or walnuts. This bag is the factory-made version: the same flat cut, dried from durum wheat semolina, ready in the time it takes to boil.
