Classic elbow macaroni from Nuhun Ankara - short curved tubes of plain durum wheat pasta, the shape Turkish home cooks reach for in buttered makarna, soups and baked dishes. Product of Turkey.

Highlights

  • Durum wheat semolina - the only ingredient on the pack
  • Curved hollow tube - sauce and cheese settle inside the bend
  • 7 to 9 minutes - the cooking time printed on the pack
  • About 8 servings - per 17.64 oz (500 g) bag, as the pack states
  • No added salt - salt the water to your own taste

How to Cook

The pack asks for about 1 liter of water per 100 g of pasta. Bring it to a boil, salt it lightly, add the pasta and cook gently for 7 to 9 minutes, stirring now and then. Then pour in a glass of cold water and drain, as the pack directs.

Taste from 7 minutes for firm pasta. Do not leave it sitting in the hot water once it is done, or the tubes go soft.

It is the natural shape for macaroni and cheese, pasta salad, tomato and butter makarna, or a handful dropped into a vegetable soup.

What Is Dirsek Makarna?

Dirsek means elbow in Turkish, and dirsek makarna is the same short bent tube Americans know as elbow macaroni. In Turkey it is everyday family pasta: boiled and tossed with butter and grated cheese, mixed with tomato paste and a little pepper paste, or baked with a white sauce. If you have cooked boxed macaroni and cheese, you already know how to use it.
